How it started

We had
somethin’
to taco ’bout.

Somethin’ To Taco ’Bout is a Southern Nevada-based food trailer owned and operated by Manny and Riley Franco.

What officially launched in October 2021 grew from a shared love of great food, creative ideas, and the kind of hospitality that makes people feel welcome at the window. We take familiar favorites, blend styles, and turn them into something unmistakably ours.

Today, the truck rolls throughout the Las Vegas Valley serving public stops, private parties, weddings, fundraisers, office lunches, and major corporate events.

Manny Franco

Chief Taco Whisperer

Manny built his career in food and beverage service and comes from a long line of great home chefs. He loves the challenge of blending flavors and styles to create something new—and making sure every guest leaves with a favorite.

Riley Franco

Chief Brand Manager

A Las Vegas native and UNLV alumna, Riley built her career in the nonprofit sector while continuing her work as a freelance graphic designer. She brings the brand, visuals, and personality of Somethin’ To Taco ’Bout to life.
